These 3-ingredient pumpkin chocolate chip cookies are the easiest cookies you will ever make! They take minutes to mix up but are packed with flavor. Not only are they easy to make, but they are also easily customizable to be allergen-friendly, whether gluten-free, dairy-free, vegan, or vegetarian.
I first made these cookies about 5 years ago and was shocked by how good they are. They are soft and chewy and have the perfect pumpkin spice flavor! I’ve been making them ever since, and they never disappoint.
Alright, you are probably wondering what the 3 ingredients are: spice cake mix, pumpkin puree, and chocolate chips! That’s it! Mix them all together, then scoop onto a baking sheet and bake.

Yes, you can easily make these cookies gluten-free by swapping out the spice cake mix for a gluten-free one, like this one. Gluten-free alternatives can sometimes change the texture of baked goods, so you may need to test out different amounts of the cake mix to find what works best for you.
Yes again! By choosing dairy-free chocolate chips, you can make this recipe dairy-free.
Depending on the spice cake you choose, how “healthy” these cookies are varies. The pumpkin puree does replace the usual, more unhealthy wet ingredients, like butter and oil, though!
