Make the ricotta pancakes: combine the flour, sugar, baking powder, baking soda, and salt in a small bowl and stir to combine.
Place the ricotta, milk, egg, and vanilla in a medium bowl and whisk until smooth. Add the dry ingredients into the wet, and use a rubber spatula to mix until just combined. The batter may be a bit lumpy which is fine!
Set aside. To make the cinnamon swirl combine the butter, brown sugar, and cinnamon in a bowl. Transfer to a squeeze bottle (or just use a spoon to drizzle it on!).
Place a pan over medium heat. Grease lightly with butter or olive oil. Scoop a heaping 1/2 cup of batter onto the pan and flatten out. Drizzle the cinnamon mixture in a spiral on top of the pancake. After a couple minutes, flip and cook an additional 1-2 minutes until golden brown on both sides. Repeat with the remaining batter.
To make the topping, place the heavy cream, powdered sugar, vanilla extract, and salt in a small bowl. Whisk for a few minutes until the cream has thickened, but no peaks have formed. Drizzle on top of the pancakes and enjoy!
