Add the oreos to a food processor and pulse until fine crumbs remain. Add cream cheese and pulse until it's fully combined with the oreos.
Using a 1 tbsp cookie scoop or your hands, scoop out 1 tbsp of the mixture. Roll the ball in your palms until you have a smooth ball. Transfer to a plate and transfer to the freezer for 15 minutes.
Add white chocolate chips and vegetable oil to a bowl. Microwave for 30 seconds then stir. Then microwave for 15 second intervals, stirring in between, until the chocolate is fully melted and smooth.
Drop each truffle into the chocolate, one at a time. Use a fork to lift the truffle out of the chocolate and transfer it to a piece of parchment paper. Repeat with the remaining truffles. To decorate the truffles, crush up an extra oreo and sprinkle it on top before the chocolate sets up. Let the chocolate set up then transfer the truffles to the fridge!
Take the truffles out of the fridge just before serving. Keep any leftover truffles in a sealable container in the fridge for up to 4-5 days. Enjoy!
