I am obsessed with these banana streusel muffins. They are soft, fluffy, and have all the best banana bread flavors. Plus streusel? Streusel only makes a muffin better, and you can’t convince me otherwise.

Ingredients
muffins
- 2 1/2 cups flour 325 grams
- 1 tbsp cinnamon
- 2 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 1/2 cup olive oil 120 grams
- 1/2 cup greek yogurt 120 grams
- 1 cup brown sugar 215 grams
- 3 medium bananas
- 2 eggs
- 1 tsp vanilla extract
streusel
- 1/4 cup butter cold and cubed, 56 grams
- 1/4 cup brown sugar 56 grams
- 1/4 cup rolled oats 45 grams
- 1/2 cup flour 65 grams
- 1/2 tsp cinnamon
- pinch of salt
Instructions
- Preheat the oven to 375F. Combine the dry ingredients in a medium sized bowl: the flour, cinnamon, baking powder, salt, baking soda. Stir until combined then set aside.
- In a large bowl, add the olive oil, greek yogurt, brown sugar, eggs, and vanilla. Peel and mash the bananas, then add them to the bowl. Whisk until well combined. Add the dry ingredients and mix until just combined, until there are no flour streaks remaining. Set aside.
- To make the streusel, add the brown sugar, rolled oats, flour, cinnamon, and salt to a bowl and mix to combine. Add the cold, cubed butter to the bowl. Use your fingers to break up each piece of butter, pressing it into the flour. The streusel should stick together if you squeeze it in your fist, but should crumble when you run it through your fingers.
- Line a muffin tin with baking cups. Scoop about 1/3 cup of batter into each one and top with a handful of streusel. Transfer to the oven and bake for 25-30 minutes, until an inserted toothpick comes out clean. Enjoy!

These are so delicious!! Not too sweet, but certainly satisfies the sweet tooth. I only had two bananas on hand, so the muffins weren’t very banana-y which I like.
These made more than 12 muffins. My muffin tin could only accommodate for about 1/4 cup of batter in each cup. I put the overflow in a loaf tin. So I ended up with 12 solid muffins and a nice banana streusel loaf. 10/10, happy girl over here!
made these this morning && they’re incredible. perfectly sweet, tender, fluffy, and perfect flavor. YUM.

These are my favorite banana bread recipe! I make it on repeat now. My family never finishes a loaf of banana bread (I’m usually the one to eat most of it). These are the perfect portion size. I make roughly 24 muffins consistently with your recipe and add walnuts because I love crunch in there. I freeze whatever ones we don’t eat immediately and use them for a quick breakfast in the microwave with butter and flaky salt. Delicious!! Your recipes never let me down!
yay! this is music to my ears!! ohh adding walnuts is such a good idea. glad you enjoyed these!! <3
