Guys. I’m excited about this recipe! These chicken meatballs with dill yogurt sauce are so delicious and super easy. I am a sucker for dill. I love dill. It tastes so bright to me and can easily bring out good flavors.
The dill I used in this dish actually grew in my parents’ backyard. My mom planted dill in the garden a few years ago, and some of it blew over to the side of the basketball court in the backyard, where it grew right there. And now, years later, it is still there. So shoutout to the dill by the 3-point line that made this post possible.

Because I love dill so much, I added about twice as much as the amount I put in the recipe because I love having that strong flavor. Start with the amount in the recipe, but if you want it more dilly, then add add add.

As for the meatballs in this recipe, sometimes I make them myself using the recipe below, but if I am really in a time crunch, I use pre-made meatballs from the fridge section at Costco!
Can we just talk about how great Costco is for .5 seconds? Wow, I just love that place. Growing up, I would always go with my mom to Costco because I loved all the samples. Also, strangely, my oldest brother and I loved the smell of the fridges/freezers in Costco. We would open the freezer door and just stick our bodies in and take a big whiff! I know you’re probably thinking I’m weird, but next time you go to Costco, smell away, and you’ll change your mind.
Growing up, one of my favorite foods in the world was pasta. I used to love it and would eat it any chance I could get! Over time, my palette has changed, and I don’t love pasta nearly as much. I like it, but I definitely don’t crave it like I used to. One plus of eating pasta in today’s world is that there are so many different kinds available in most grocery stores! There are so many different plant-based pastas that look oh so good – edamame pasta, black bean pasta, spinach pasta, lentil pasta, etc., etc., etc. The pasta I used in this dish was garbanzo bean pasta, and it was delicious. Obviously, this dish can be made with whatever type of pasta you like.

how to make chicken meatballs with yogurt dill sauce
DIRECTIONS:
Bring a large pot of water to a boil and cook the pasta until done (about 7 to 10 minutes). Drain and set aside.
While the pasta is cooking, begin to make the meatballs. Combine all ingredients – chicken, garlic, panko bread crumbs, dill, salt, parmesan, and sun-dried tomatoes – in a bowl. Roll into 1-1/2 inch meatballs.
Heat some oil in a large skillet and add the meatballs. Cook for 10 minutes, or until done, turning them every few minutes.
Mix yogurt, garlic, dill and salt in a bowl. Add more dill if its not dilly enough!
Serve with pasta on the bottom of your plate/bowl, topped with meatballs and yogurt sauce, finished with more dried dill.
Please make this recipe. ITS KIND OF A BIG DILL.
