chilled apple pie cookies

I love apples in the fall! These chilled apple pie cookies have the perfect autumn flavor. They have a similar flavor to my cinnamon oatmeal cookies, but have a sweet cream cheese frosting and are topped with fresh, crisp apples. Because they are chilled, the texture stays nice and firm, and they are extra sweet and buttery.

Ingredients

cinnamon oatmeal cookie base

  • 1 cup butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 tbsp plain greek yogurt or sour cream
  • 2 eggs
  • 1 tbsp vanilla
  • 3 1/2 cups flour
  • 1 1/2 cups rolled oats
  • 1 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp baking powder

cream cheese frosting & toppings

  • 1/2 cup butter room temp
  • 8 oz cream cheese room temp
  • 3 cups powdered sugar
  • 1 tsp vanilla
  • pinch of salt
  • 1 apple any kind will work!
  • cinnamon

Instructions

  1. Preheat the oven to 325. Add butter and both sugars to a bowl. Mix for 2-3 minutes. Add greek yogurt, eggs, and vanilla and mix until combined.
  2. Add flour, rolled oats, salt, cinnamon, and baking powder. Mix until dough is just combined. Using a large (1/4 cup) cookie scoop, scoop the dough onto a lined baking sheet.
  3. Bake at 325 for 9-12 minutes. The cookies will still look a little doughy when you take them out of the oven — this is perfect. If the cookies are slightly domed, use the bottom of a flat glass cup to press them down slightly, making the tops of the cookies flat. After the cookies cool for 5 minutes, transfer them to the fridge to finish cooling.
  4. While the cookies cool, make the frosting. Add the room temperature butter and cream cheese to a bowl and mix for 3-4 minutes. Add powdered sugar, vanilla, and salt, and mix an additional 3-4 minutes. The frosting should be smooth and easy to spread.
  5. Thinly slice the apple (I leave the peel on, but you can peel it if you’d like). I like to use a mandolin to get really thin slices, but a knife works fine too!
  6. Frost each cookie and top with a few slices of apple. Dust the cookies with cinnamon and transfer to the fridge to chill for at least 30 minutes. Keep in the fridge until you’re ready to serve them. These cookies are best cold! Enjoy!

Do you blend the oats first or just regular ole oats mixed in?

don’t blend! just add the straight up oats. i’d recommend using old fashioned oats rather than quick oats if possible!

These are my absolute favorite! Im wake them seasonally and just sub out my favorite fruits (I’ve done apple, peach, and am making blueberry right now). Definitely give a chilled cookie a try. This is a keeper!

because why choose one when you can have both?? here is the recipe for both:

caramel coconut:
- 1 Quaker® caramel rice cake
- 1 teaspoon hazelnut butter
- 3 dates
- 1/4 cup unsweetened shredded coconut
- 1/4 teaspoon vanilla paste
- pinch of salt
- 1/2 teaspoon hot water
- 2 tablespoons chocolate chips
- 1/2 teaspoon coconut oil
- flaky salt
add the dates, coconut, vanilla paste, and salt to a food processor. blend until the dates start to break down, then add the hot water and blend until a paste forms. set aside. place the chocolate chips and coconut oil in a bowl and microwave at 15 second intervals, stirring between each, until melted and smooth. top the Quaker® caramel rice cake with the hazelnut butter, the coconut date mixture, and drizzle with chocolate. top with flaky salt then transfer to the fridge to set up for about 10 minutes. enjoy!

cottage cheese:
- 1 Quaker® lightly salted rice cake
- 1/3 cup cottage cheese
- 1/4 avocado, thinly sliced
- 1 mini cucumber, thinly sliced
- everything but the bagel seasoning
- fresh dill
top the Quaker® lightly salted rice cake with the cottage cheese, avocado, cucumber, seasoning, and fresh dill. enjoy!
