Ingredients

SNICKERDOODLE DOUGH

  • 1 cup butter softened
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3 1/2 cups flour 455 grams
  • 1 tbsp cornstarch
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tbsp white sugar
  • 1 tsp cinnamon

FILLING

  • 1/2 cup brown sugar
  • 1/4 cup butter softened
  • 1 1/2 tsp cinnamon

CREAM CHEESE FROSTING

  • 4 oz cream cheese softened
  • 3 cups powdered sugar
  • 1 tsp vanilla
  • 1-2 tbsp milk

Instructions

  1. Preheat the oven to 350F. Begin by making the brown sugar cinnamon “filling”. Add the softened butter, brown sugar, and cinnamon to a small bowl. Mix until combined. Use your fingers to drop small chunks of the mixture onto a lined plate or baking sheet. Repeat until all the mixture is used up and transfer the plate to the freezer while you make the dough.
  2. To make the dough, add the butter, brown sugar, and white sugar to a stand mixer. Mix for 2-3 minutes, until lighter and fluffy. Add eggs and vanilla, and mix again.
  3. Add flour, cornstarch, baking soda, and salt. Mix until just combined.
  4. Remove the brown sugar cinnamon chunks from the freezer. Add them to the dough and mix slowly until they are just combined.
  5. Add the 1 tbsp sugar and 1 tsp cinnamon to a bowl and mix until combined.
  6. Use a large cookie scoop to scoop out balls of dough. Roll each dough ball in the palms of your hands to make them into a smooth ball, then drop it into the bowl of cinnamon sugar. Roll it around until it is completely covered in cinnamon sugar, then transfer to a lined baking sheet.
  7. Add up to 6 cookies on a cookie sheet. Bake for 8-10 minutes. Cookies should look just set, possibly still slightly doughy. This is perfect. Let the cookies cool completely.
  8. While the cookies cool, make the frosting. Combine the softened cream cheese, powdered sugar, vanilla, and milk in a bowl. Whisk until smooth. If the frosting is too thick for your liking, add another splash of milk and whisk to combine.
  9. Pipe frosting onto each cookie and enjoy!

This recipe looks amazing! I’m going to make these for a Christmas cookie box that I’m giving to friends. If I want to make the dough ahead of time, would you advise to make the entire dough with the filling and roll it into balls and put in the fridge/freezer until ready to bake? Or would it make more sense to keep the dough and filling separate (the dough in the fridge, the filling in the freezer) until I’m ready to bake, then bring the dough to room temp and add in the frozen filling? Not sure what makes more sense. Thanks!

hi! yay that will be so fun! i would definitely make the entire dough, roll it into balls, then put it in the fridge or freezer! that will make things much simpler when you go to bake. if you’re only making the dough 2-3 days before baking, you can just put them in the fridge. if it will be much longer than that i would put them in the freezer! i hope you enjoy!

Can you bake directly from frozen or bring to room temp before baking?

      2. thepalatablelife

you can bake from frozen! just add an extra minute or two to the bake time!

Sooo good! My batch made 30 that were probably a little thicker and smaller than the ones pictured because I used an ice cream scoop in place of a cookie scoop. I cooked for 10 min and they turned out so perfect and soft. I will for sure make again!

Brown sugar/butter filling caused cookies to spread a lot. Very underbaked with suggested baking time, had to up baking time, but edges started to burn. Made the cookies smaller than recommended after this and it helped a little, still spread a lot and slightly underbaked

i’m sorry these didn’t turn out for you. was the brown sugar butter filling really firm before adding it in? if it wasn’t in the freezer for long enough then it wouldn’t hold it’s shape well.

Hi! When you say butter and brown sugar, are you talking about unsalted butter and light brown sugar? Thanks!

hi! i usually use salted butter, but i don’t think it makes a huge difference (salted vs unsalted) so i don’t specify. just use whatever you have on hand! i also usually use light brown sugar, but same as the butter — it won’t make a huge difference so use what you have!

These cookies are amazing!!! I can give no higher praise than saying that I baked these for a Christmas function last year and had a baby in June. When I showed up to the same Christmas function this year, the first thing everyone asked me was if I had brought the cookies again. Make these- you won’t regret it!

I made these yesterday and they’re AMAZING. 9/10!!! My only quarrel was the recipe for the icing did not taste good. 🙁 I did half a cup of heavy cream, powdered sugar splash of vanilla and it was great.

I found this recipe via your Instagram and saved it for *someday*. Then I decided I couldn’t let it be swallowed by the sands of time, so I made them over the weekend! I am a cinnamon roll enthusiast and I have to say that these blew me away. I like them even more than cinnamon rolls, and I didn’t expect that!

I used bread flour and found my dough was too dry initially. I added a few slow splashed of milk and it came together well. Also adding that I don’t have a stand mixer so I just used a bowl and wooden spoon for mixing. It was physically harder than I expected (lol) but I felt pretty accomplished afterward.

Thank you so much for these amazing cookies! I will make them again!!!
