cornbread cookie

I have gotten so many requests to remake Crumbl’s cookies, so we are starting off with copycat Crumbl cornbread cookies! These cookies are just like the original and are so easy to make at home!

Crumbl is wonderful, but if you don’t live by a Crumbl, or you are craving a flavor they aren’t featuring that week, then you are out of luck! But not anymore! At least with the cornbread flavor. I’ve got you covered!

what is a cornbread cookie?

This cornbread cookie tastes exactly like it sounds. It tastes like the perfect combination of cornbread and a sugar cookie! Plus, this cookie is topped with a honey buttercream and a drizzle of honey, giving it the perfect cornbread vibes. Similar to cornbread, this cookie is quite dense, but each bite is soft and full of flavor.

what is in this copycat crumbl cornbread cookie?

  • butter
  • shortening
  • white sugar
  • brown sugar
  • eggs
  • honey
  • vanilla
  • flour
  • cornmeal
  • cornstarch
  • salt
  • baking powder

The cornmeal gives this cookie its distinct cornbread taste. It is essential! You can get cornmeal at any grocery store, and you will need it. The honey in the batter gives the cookie a slight honey taste, but it isn’t overwhelming with the toppings. The cornstarch makes these cookies soft and dense! I love adding cornstarch to my cookies, as you can see from my recipes like my brown butter raspberry white chocolate cookies or my Parks and Rec waffle cookies.

If you try these copycat Crumbl cornbread cookies and love them, please leave a review down below or share on Instagram and tag me @ thepalatablelife! I cannot wait for you to try these! Let me know in the comments which Crumbl cookie I should recreate next.

Ingredients

cornbread cookies

  • 1/2 cup butter
  • 1/2 cup shortening
  • 1 cup light brown sugar
  • 1/2 cup white sugar
  • 1/4 cup honey
  • 2 eggs
  • 1 tsp vanilla
  • 2 3/4 cups flour
  • 1 cup cornmeal
  • 1 tbsp cornstarch
  • 1 tsp salt
  • 1 tsp baking powder

honey buttercream

  • 1/2 cup butter
  • 2 tbsp honey
  • 2 cups powdered sugar
  • 1 tsp vanilla

Instructions

  1. Preheat the oven to 350. Combine butter, shortening, brown sugar, and white sugar in a large bowl or stand mixer. Mix for 3-4 minutes until well combined.
  2. Add eggs, honey, and vanilla. Mix again until combined.
  3. Add flour, cornmeal, cornstarch, salt, and baking powder. Mix until just combined. Dough should be quite thick and not too sticky.
  4. For large, Crumbl like cookies, scoop 1/2 cup of dough and roll into a ball. Place up to 6 dough balls on a baking sheet. Bake for 13-15 minutes. The cookies should look like they're not quite done, and should look slightly doughy. This is perfect! Take the cookies out of the oven and using a cup with a flat bottom, flatten the cookies into thick disks (instead of rounded balls).
  5. Let the cookies cool on the pan for 5 minutes, then transfer the cookies to a cooling rack and let cool completely.
  6. While the cookies are cooling, make the honey buttercream. Combine butter and honey in a bowl. Mix for 2-3 minutes until well combined. Add powdered sugar and vanilla, and mix again for 1-2 minutes until smooth.
  7. Add a scoop of the honey buttercream on top of each cookie. If you want, drizzle a little extra honey on top and dive in. Enjoy!

These cookies turned out great!! I’ve never had the ones from crumbl, so I can’t attest to their accuracy however these smack so just make them regardless. The only thing I did departed from the recipe was in my buttercream frosting I added cinnamon for that honey cinnamon butter from Texas Roadhouse vibe, which I highly recommend!!

I’m planning on making these today and I’m wondering what the shortening does to the cookie- can I make it all butter if I choose to or is the shortening important for something? Thanks!

Hi! I’m so excited for you to try these! Shortening is 100% fat, whereas butter is fat but also has milk and water in it. Shortening helps these cookies to be thick and soft. If you don’t have shortening or don’t have access to it, then you can just use all butter instead. But, if you can get shortening, I highly recommend using it!

Haven’t made these yet, but i’m curious, you flatten them AFTER baking? I’ve never flattened after baking, curious as to why it wouldn’t be done before.

    1. thepalatablelife

You can flatten the cookies slightly before baking if you would like! It won’t make a huge difference if you do it before or after baking.

      1. Cheryl

I have printed this and I make them quite frequently and yes, I love the Crumbl cookie, but this is a perfect substitute since I live about an hour away from the closest. I find flattening the cookies afterwards prevents the spread, although so it does using cornstarch, but if I flatten them first, they cook thinner and are not as flu

Hey! Unfortunately a corn meal mix won’t work because it is not just cornmeal. Cornmeal mix usually has flour and some combination of baking soda and salt. Since it is not just cornmeal, the mix won’t work!

hi!! so glad you enjoyed these. that probably has to do with flour. if you under/overmeasure flour it will affect how the cookie turns out. if they were very flat, it seems like you probably needed more flour! next time i would try adding a couple tablespoons more, or at least until the dough is no longer sticky. let me know if you have any other questions!

if it is too thin, just add more powdered sugar! if your honey is really thin or too much vanilla is added then it can be a little thin. adding more powdered sugar will help it thicken up again!

Thank you for the recipe. The texture and flavor are great, but I did end up doubling the salt in the cookie dough and then sprinkling on some at the end of the finished cookies to tame the sweetness. The frosting is very sweet but that’s just how American buttercream is. I’d either swap it for something like Swiss meringue buttercream or just do a small amount for aesthetics. Such a tasty cookie.

Made these twice now, and the second batch lasted long enough for me to finally get the frosting on them! Cut the sugar by 1/2cup in the dough as the cookies were a bit too sweet for me (I’m an unsweetened iced tea kinda girl for reference) and would recommend purchasing a finer grind of cornmeal- but these cookies are phenomenal! The texture is everything and the frosting really adds the perfect touch! So happy to add this recipe to my collection 🙂

Made this in the UK and we don’t have shortening so I used lard. I also used polenta instead of cornmeal. I’m not sure if I’ve done it right as I’ve never had Crumbl but I heard about this flavour and it sounded yummy. The end result is delicious either way!

hi! you can do either. you can either freeze the dough balls without frosting, or freeze after baking. if you freeze after baking, don’t add the frosting first. add the frosting after thawing the cookies!

I’ve tried several Crumbl copycat recipes in the past and this is the absolute best so far. I agree with one of the previous comments. Life Changing!! My only complaint is that It wasn’t as corn forward as the original. Next time I might roll them in cornmeal before I bake them just to give them a little extra oomph.

This is my favorite Crumbl and I find it maybe twice a year. This recipe fills the craving for sure!. I typically have to remember to add a 1/4 or so extra flour living at 9000 ft. If I forget, my 1 tester is still good and soft but flat. This is my go to for a sweet treat! Thanks!

I had never heard of a cornbread cookie cake and my step daughter asked me to bake her some. I found your recipe and it is the best recipe. Everyone that ate one said its the best cookie they have ever ate so thank you so much for sharing your recipes.

This recipe is AMAZING! So please don’t hate me for saying…the second time I made these, I added an extra 1/4 cup of corn meal and removed 1/4 cup of flour and it was even more spot on to the crumbl cookie. So good! Thank you!

If I wanted to make them half the size with a 1/4 scoop instead, how much time do you think I should bake them?

I love these and taste wonderful and I follow the recipe and they are still a little bit to runny what am I doing wrong? And no I do not melt my butter just let it get to room temp.

hi! can you give me any other info? do you mean the dough is runny? or the cookies spread excessively when baked? happy to help you figure this out!!

Hi there 🙂 Is the butter unsalted for this recipe?

    1. thepalatablelife

i usually use salted! it doesn’t make a huge difference though. the difference is about 1/4 teaspoon. so if you’re using unsalted butter you can add 1/4 teaspoon of salt.

I am so ready to try these cookies! I had some cornbread cookies in Kentucky and was looking to reproduce something similar. Do you, or anyone else, have any idea how to adjust these to high altitude cooking? I have never cooked cookies with cornmeal or shortening before. Not sure my regular adjustments will do the trick. THANKS.?

hi! you shouldn’t need to make any large adjustments. these cookies already have a high flour amount so you should be just fine! also, if you don’t want to use shortening you can just use all butter instead! hope you enjoy!

because why choose one when you can have both?? here is the recipe for both:

caramel coconut:

- 1/2 teaspoon coconut oil
- flaky salt
add the dates, coconut, vanilla paste, and salt to a food processor. blend until the dates start to break down, then add the hot water and blend until a paste forms. set aside. place the chocolate chips and coconut oil in a bowl and microwave at 15 second intervals, stirring between each, until melted and smooth. top the Quaker® caramel rice cake with the hazelnut butter, the coconut date mixture, and drizzle with chocolate. top with flaky salt then transfer to the fridge to set up for about 10 minutes. enjoy!
