ingredients needed
chilled peppermint cookies
- 1/2 cup butter, cold
- 1/3 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups (162 g) all-purpose flour
- 1/2 cup rolled oats
- 1 teaspoon kosher salt
- 1/4 teaspoon baking powder
- 2/3 cup peppermint bark, chopped
frozen hot chocolate topping
- 1 cup heavy cream
- 1 packet of hot chocolate (about 3-4 tablespoons)
- pinch of kosher salt
how to make frozen peppermint hot chocolate cookies
- Preheat the oven to 325F.
- Cream the butter and sugar. Add the butter, brown sugar, and granulated sugar to the mixing bowl of a hand mixer or stand mixer. Mix until well combined, about 3 minutes.
- Add the wet ingredients. Add the egg and vanila. Mix again until the egg is fully combined, about 2 minutes.
- Add the dry ingredients. Add in the flour (I like to measure with a kitchen scale), rolled oats, salt, and baking powder. Mix on low until just combined (about 1 minute). Then add the peppermint bark, mixing until it is evenly distributed throughout the dough.
- Form the dough balls. Use a large cookie scoop (about 1/4 cup) to scoop out the cookie dough. Scoop the cookie dough (up to 6 cookies) onto a cookie sheet, equally spaced apart. Bake for 10-12 minutes, until the edges are just starting to set.
- Let the cookies cool. Remove the cookies from the oven and let them cool on the baking sheet for 10 minutes. At this time, if your cookies are not perfectly round, you can use a circle cookie cutter to swirl them into a perfect circle (cookie scoot). After 10 minutes, carefully transfer the cookies to the fridge to cool completely.
how to make the frosting
- Mix all the ingredients. Add the heavy cream, packet of hot chocolate, and salt into the bowl of a stand mixer or hand mixer. Mix until soft peaks form, about 5 minutes.
- Frost the cookies. When the cookies are completely cooled, transfer the frosting to a piping bag (or ziploc bag with the corner snipped) and frost the cookies.
- Chill the cookies. Keep the cookies in the fridge until they are ready to be served. Enjoy!

Is it possible to freeze the cookie dough??
yes! just scoop the dough out into balls, then transfer the dough balls to the fridge for a couple hours. then put them in an airtight container in the freezer! when you want to bake, you can bake them straight from the freezer, but just add a few extra minutes to the bake time. then make the hot chocolate frosting fresh! it won’t freeze well.
Can you freeze these cookies too? Like if I needed to travel with them, should I freeze them first so that when I get there they would be thawed out but still cold?
you can freeze the cookies! i wouldn’t recommend freezing the frosting, though. if possible i would make it day of and frost them right before serving!
