I’ve tried a lot of “healthy desserts” before (like bone broth hot chocolate and chickpea cookie dough) and I have not been a fan, so you can trust me when I tell you that this healthy pistachio pudding is actually good. Like actually.
ingredients you’ll need
- 1/4 cup pistachios – Raw or roasted, shelled
- 10 oz block silken tofu – Look for shelf-stable or refrigerated varieties
- 1/4 cup white chocolate, melted – Use vegan white chocolate if dairy-free
- 2 tablespoons maple syrup – Adds natural sweetness
- 1 teaspoon vanilla extract – For warmth and depth
- Pinch of salt – Balances and enhances flavor
Optional: A dash of cinnamon for dusting before serving.
how to make healthy pistachio pudding
- make the pistachio butter: Add pistachios to a food processor and blend until a smooth butter forms. If needed, add 1/2 teaspoon olive oil to help the process.
- blend the pudding: Add silken tofu, melted white chocolate, maple syrup, vanilla extract, and a pinch of salt. Blend until completely smooth and creamy.
- chill and set: Transfer the mixture to a container, cover with plastic wrap, and refrigerate for at least 2 hours.
- serve: Before serving, dust with cinnamon or your favorite toppings and enjoy!
pistachio substitutes
If you aren’t a fan of pistachios, are if you’re allergic, here are a few substitutes:
- Cashews – Mild and creamy
- Almonds – Toast first for added flavor
- Sunflower seeds – Nut-free and allergy-friendly
- Hazelnuts – For a more dessert-like, Nutella-inspired flavor
why are we using silken tofu?
Silken tofu is a secret weapon in plant-based desserts. Here’s why:
- creamy texture – silken tofu is sooo soft and creamy. it blends into the smoothest pudding.
- high in protein – we love a high protein dessert! it’s a great nutritional boost in your dessert.
- neutral flavor – it absorbs and enhances other ingredients like chocolate, vanilla, or nuts
- naturally thickening – it thickens the pudding, especially as it chills, so there’s no need for eggs, cornstarch, or gelatin
topping ideas:
- Fresh berries
- Shaved dark chocolate
- Chopped nuts
- Toasted coconut flakes
- Cinnamon or cardamom
- A dollop of coconut whipped cream

Thank you for this! I’m curious to try it. As I’m diabetic, would you know what I could substitute for the white chocolate, please?
hi! you could try Lily’s white chocolate? they have no added sugar? you just need something like chocolate that will harden once it cools!
