herby chicken meatball bowl

bowl of chicken meatballs

After eating nothing but cookies for the entire month of December, my body is craving whole foods, and this herby chicken meatball bowl is the perfect answer. It starts with kale, tossed with a yogurt jalapeño dressing, roasted sweet potatoes, parmesan roasted chickpeas, and herby chicken meatballs. If that doesn’t scream nourishing and delicious, I don’t know what does.

PLUS, I’ve gotten a lot of requests recently for recipes that also make great leftovers, and this bowl makes incredible leftovers. The sweet potatoes, chicken, and chickpeas reheat beautifully, and the kale can be tossed on the day of. This would also be a great option for meal-prepping. Double everything, and you’ll have enough for lunches for a week!

OH, and the yogurt jalapeño dressing? Addicting, vibrant, fresh, packed with herbs, you’ll want to put it on everything. I would seriously double the dressing just so you have extra in your fridge.

ingredients needed for herby chicken meatball bowls

chicken meatballs
  • 1 lb ground chicken
  • 1 cup ricotta cheese
  • 1 egg
  • 1/2 cup panko breadcrumbs
  • 1 shallot, finely chopped
  • 2 green onions, finely chopped
  • 1/2 cup cilantro, finely chopped
  • 1/4 cup dill, finely chopped
  • Zest of a lemon
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil
roasted sweet potatoes
  • 1 large sweet potato
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp cumin
parmesan Chickpeas
  • 1 can chickpeas
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp herbs de province (or Italian seasoning)
  • 2 tbsp parmesan cheese
yogurt jalapeño dressing
  • 1 cup greek yogurt
  • 1 cup fresh basil
  • 1/2 cup fresh dill
  • juice of a lemon
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1 jalapeño (seeds removed and washed)
  • 2 cloves of garlic
  • salt and pepper, to taste
other
  • 4 cups kale

how to make herby chicken meatball bowls

  1. Preheat the oven to 400F.
  2. Make the chickpeas. Drain the chickpeas and pat them dry. Transfer them to a baking sheet. Add the olive oil, seasonings, and parmesan cheese. Toss until everything is coated. Transfer to the oven and bake for 15 minutes.
  3. Make the sweet potatoes. While the chickpeas are cooking, start on the sweet potatoes. Chop the sweet potatoes into bite-sized pieces. (If you are crunched for time, using pre-cut sweet potatoes is a great time-saving option!) Transfer to a baking sheet and add the olive oil and spices. Toss until everything is coated. Bake for 15-25 minutes, until the sweet potatoes are cooked through and starting to brown.
  4. Make the chicken meatballs. While the other elements are in the oven, add all the chicken meatball ingredients into a bowl except for the olive oil. Mix until well-combined. Take about 2 tbsp of the chicken mixture and shape them. I like forming them like thick little patties so they sear well, but you can also shape them into classic meatballs.
  5. Cook the chicken meatballs. In a large pan over medium-high heat, add 2 tbsp of olive oil. Cook the meatballs in the pan, flipping after about 3-4 minutes for each side. If you would rather cook the chicken meatballs in the oven, they can be cooked at 400F for about 15-25 minutes until their internal temperature is 165F.
  6. Make the dressing. Add all the dressing ingredients to a food processor. Blend until smooth.
  7. Assemble the bowls. Divide the kale, sweet potatoes, roasted chickpeas, and chicken meatballs between bowls. Top with the yogurt jalapeno dressing and enjoy!

Can I substitute the chicken with turkey?

Yes, you can absolutely substitute the ground chicken for ground turkey for a more protein-packed option.

Can I make these bowls gluten-free/dairy-free?

To make herby chicken meatball bowls gluten-free, just substitute the panko crumbs for a gluten-free variation.
Making these bowls dairy-free requires a few more substitutions, and they are largely up to your preference. You could omit the cheese in the meatballs and chickpeas completely if you want. One commenter said they used silken tofu in place of the ricotta, and it turned out great for them! For the dressing, you can replace the Greek yogurt with a dairy-free option or use your favorite dairy-free dressing instead.

How can I store these bowls?

These bowls are great for meal prep or leftovers. Split the ingredients into individual airtight containers and enjoy for up to 4 days. If you want to freeze the meatballs, they stay great in an airtight container in the freezer for up to 3 months.

  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp herbs de province or Italian seasoning
  • 2 tbsp parmesan cheese

roasted sweet potatoes

  • 1 large sweet potato
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp cumin

chicken meatballs

  • 1 lb ground chicken
  • 1 cup ricotta cheese
  • 1 egg
  • 1/2 cup panko breadcrumbs
  • 1 shallot finely chopped
  • 2 green onions finely chopped
  • 1/2 cup cilantro finely chopped
  • 1/4 cup dill finely chopped
  • zest of a lemon
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil

yogurt jalapeño dressing

  • 1 cup greek yogurt
  • 1 cup fresh basil
  • 1/2 cup fresh dill
  • juice of a lemon
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1 jalapeño seeds removed and washed
  • 2 cloves of garlic
  • salt and pepper to taste

other

  • 4 cups kale

Instructions

  1. Preheat the oven to 400F. Begin by making the parmesan roasted chickpeas. Drain the chickpeas and pat them dry with paper towels. Transfer the beans to a baking sheet.
  2. Add the olive oil, salt, garlic powder, onion powder, herbs de province, and parmesan cheese. Toss until everything is well coated. Transfer to the oven and bake for 15 minutes.
  3. While the chickpeas roast, start on the sweet potatoes. Cut the sweet potato into bite-sized pieces. Transfer to a baking sheet and add the olive oil, salt, cinnamon, and cumin. Toss until everything is well coated. Transfer to the oven and bake for 15-20 minutes, until sweet potatoes are cooked through and starting to brown.
  4. While the sweet potatoes and chickpeas cook, make the chicken meatballs. Add all the ingredients (except the olive oil) to a bowl. Mix until well combined. Scoop out about 2 tbsp of the chicken mixture. Use your hands to form the chicken into a cylinder shape (you can also just roll them into balls, but I like having more surface area to brown).
  5. Add the olive oil (2 tbsp) to a large pan over medium-high heat. Add half of the meatballs and cook for 3-4 minutes on each side, until golden brown and until the internal temperature reaches 165 F. Repeat with the remaining chicken.
  6. While the chicken meatballs cook, make the dressing. Add all the ingredients (greek yogurt, fresh basil, fresh dill, juice of a lemon, olive oil, honey, jalapeño, garlic, salt, and pepper) to a food processor or blender. Blend until smooth.
  7. To assemble, divide the kale, sweet potatoes, roasted chickpeas, and chicken meatballs between bowls. Top with plenty of yogurt jalapeño dressing and enjoy!

sure! you can just leave the ricotta out of the meatballs (they won’t be quite as juicy and tender, but they will still be fine!). then, just don’t add the parmesan to the chickpeas!

Delicious! Re the comment above about omitting the cheese – I have a dairy allergy in my household and made the meatballs with silken tofu – delicious and achieves the same result!

I decided to make this for dinner tonight and omg it is so yum!! The jalapeño gives it the perfect kick and a punch of flavor. I added it to a bed of fresh arugula and it was delicious. I also tweaked it a bit with what I had available and chose to make the sweet potatoes savory. I also used extra lean turkey instead of chicken. Incredible- will definitely be making again!!

Everything about this recipe sounds fabulous! Just do not eat meat.

      THIS RECIPE WAS SO GOOD,
however my assistants kept screwing things up:( and by assistants, I mean me. I was not ready for the amount of multitasking, counter space and chaos that happened.
Maybe its me? Maybe at the end of the day, I am not a real chef (I’m not). I both burnt my meatballs and ate my chickpeas and potatoes cold.
I digress, the flavors were amazing!! And maybe one day I’ll be able to truly make this meal, for real this time.
      Thank you

I read through and thought that was a lot of steps at once – so early in the day I made the dressing & made the meatball mixture. I put both in fridge until I was ready to make dinner. I also bought pre-cut sweet potatoes from my grocer – this would be the only way I’d make on a weeknight!!!

      3. thepalatablelife

glad you were able to break up the process! hope you loved it!

Made this tonight and it turned out great!! The flavors were amazing! Do you have any tips on roasting the chickpeas? I followed the recipe, but mine turned out quite hard:/ Other than that, everything was super yummy! The sauce especially (I tried giving it 5 stars but it kept going back to 0. Best believe this is more than 5 stars!! Lol)

      5. thepalatablelife

yay so glad you enjoyed!!! for the chickpeas, i’d recommend reducing the time. if they roast for too long they can become hard. so glad you loved this one!

Can I leave out the jalapeño from the dressing? Your girl can’t handle spice ?

      2. thepalatablelife

yes you can totally leave it out! also, if you remove the seeds and wash off the jalapenos with water, it removes almost all of the spice, but still adds flavor! but you can also just leave it out if you prefer that!

This recipe was bomb! V flavorful and healthy! I doubled the recipe for meal prep and it took me about 2 hours to make. I was worried the kale by itself would taste intense but it was very mild, especially with the sauce on it. I also made the meatballs in the oven on 350 for about 20 mins or whenever it was at temp. If you were to flip it half way through it would add a bit of crispy-ness as well. I also used dill weed seasoning instead of actual dill because I forgot to pick it up at the store and it was still good! Overall I would make it again!

Intrigued by the fresh herb ingredients I was eager to try this. I’m not really someone that enjoys cooking but tired of same old boring meals. By the time I finished cooking this I wasn’t hungry anymore so saving it for dinner! Hoping I will love it! My tip for others like me (not cookers!) would be to make the dressing first; get that out of the way. Then I’d start the meatballs and get those going. Cuz by the time I got the meatballs and dressing done my potatoes and chick peas were not hot. And I think this is supposed to be served freshly warm. It took me a long time to make this recipe. Too long for me but I don’t have all the fancy processors either so if you have those it would probably be much quicker.

This recipe was a winner! My husband and I loved it! The flavors were delicious and the yogurt sauce really tied everything together. It was just as good for lunch the next day. As I don’t cook, my husband made this and he did say the prep took a while. But this will definitely be on the dinner rotation regularly.

WOW! I made this for meal prep lunches, and just finished my first one. It’s delicious and so filling! I swapped Greek yogurt for the cheese in the meatballs and swapped parsley for the dill bc I couldn’t find it, but everything tastes incredible. I used my homemade sourdough tortillas to make a wrap. Can’t wait to eat it again tomorrow ?

Meh. Took a lot of time and steps, and I’m an experienced cook who looked forward to trying it. Just didn’t live up to what my tastebuds expected. Chickpeas did not crisp up, dressing was a bit bland, meatballs were unusually soft – presume due to the addition of so much greek yogurt. Too bad, as in theory it looked great.

    1. thepalatablelife
      Reply

hi! just want to note that the meatballs call for ricotta cheese, not greek yogurt! greek yogurt will absolutely not work in the meatballs and will make them fall apart. please use ricotta next time if you want these to turn out correctly! sorry you didn’t enjoy the rest of it as much as you hoped to.

My chicken meatballs are burning (and made them with two tablespoons worth) and still not 165. Help! What am I doing wrong? Did I make them too big? I’m def oven cooking the rest.

    1. thepalatablelife
      Reply

hi! if you are cooking them on the stove, turn down the heat! it is likely that your pan is far too hot and the meatballs are burning on the outside before they can finish cooking in the center. turning down the heat will fix the issue. alternatively, you can cook them in the oven!

I have been cooking since I was eight years old, and this recipe was one of the most creative and delicious that I’ve ever made! It was so flavorful AND healthy. My husband and 20-year-old twins loved it as well. My only suggestion would be to change the order of the recipe: make the sauce first, then the meatballs (perhaps refrigerate them for a half hour or so), then make the chickpeas and sweet potato. Regardless, this is a positively brilliant recipe!!

I loved this recipe — shoutout Pinterest for bringing me here! Super easy to make and now often integrated into my weeks for meal prepping. The second time I made it, I didn’t have the correct ingredients for the meatballs — though it ended up less herby, the taste was still phenomenal and I loved that I could vary the dish with my current ingredients. Highly recommend trying!

I left out the dairy ingredients (used coconut cream for the dressing) as well as the panko, egg, and honey (threw in a couple of orange wedges). This turned out amazing! Definitely making again soon! Five stars!

this was fireeee — made it last night for dinner and some lunches this week. didn’t have plain greek yogurt, but I did have honey flavored greek yogurt so I just used that and omitted the honey in the recipe LOL. also used up all my fresh dill in the meatballs, so I used dried dill in the sauce — still soooo good. that sauce was NO JOKE. yum. although if I knew I wouldn’t have enough, I would’ve used dried in the meatballs and fresh in the sauce!

last thing: I’m doubling, maybe even quadrupling up on them chickpeas and sweet potatoes next time I make this. can’t get ENOUGH. besides, it’s good stuff. it’s fiber. whatever! HAHA

    thanks for sharing!!

Absolutely love this recipe: I make it as a meal prep for my husband and I. Doubling the recipe usually gives us both lunch for nearly a week (4 days). I call it “hot girl salad” because it seems so much like something an influencer would brag about having for lunch! I roast the sweet potatoes for a bit longer, but that’s just how I like them. I also tend to use spinach as the salad base instead of kale. The dressing is fabulous!

This was very good. And it felt good to know. I was eating healthy. It is a lot of steps which I did throughout the day instead of all at once I think next time I will do the sweet potatoes and the sauce the day before I baked mine in the oven for about 18 minutes and then put them in oil on top of the stove to kind of brown them. I did not have any dill so not sure it tasted the way it was supposed to, but it was still good!

This is so good, EVERYONE in my family loves it! It’s also become my go-to to give when a friend has a baby. It’s definitely labor intensive and I break up the prep over a couple days (dressing day before), but with planning and doubling the recipe for half me and half to give, it makes it all worth while. It’s not a weekly thing, but definitely a healthy, delicious treat.
