once upon a time apple crisp cookies

last updated on October 29, 2026

Next up for my series “cookies inspired by tv shows and movies” is these Once Upon a Time apple crisp cookies! These cookies are stuffed with fresh apples and topped with streusel and maple icing! AKA “the best cookie you’ll ever eat!” – Connor (my husband)

And I might have to agree with Connor. These cookies are SO YUM. They might be my favorite right now…or at least in my top 3! They are so soft and have such a good apple flavor.

I’ve actually never seen Once Upon a Time, but Snow White is a very important important part of the plot, so this apple crisp cookie feels very fitting!

Let’s talk more about what makes these cookies. The base is a snickerdoodle dough that is very soft. Then, each cookie is filled with small chunks of fresh apple that have been tossed with cinnamon. The cookie is then topped with streusel, just like a streusel you would find on a normal apple crisp! Then to top it all off, a generous drizzle of maple icing on top. AH if that description didn’t convince you to make these cookies, I don’t know what will.

tips for these apple crisp cookies:

  • Since these cookies are stuffed with fresh apples, they are best if they’re eaten the same day or the day after. If they sit for longer than that, the fresh juice in the apples seeps out and makes the cookie too soft. If you want these cookies to last longer than that, just leave the apples out! Just make the cookies without any stuffing. They’ll still taste amazing and last longer.
  • The easiest way I’ve found to stuff the cookies is to use a cookie scoop! I use my largest cookie scoop, 1/4 cup capacity. Scoop up the dough with the cookie scoop, then use your thumbs to create a cavity in the dough. Then you’ll be able to easily add the apples here. Once the apples are added, close the dough around the apples and you’re good to go.
  • These cookies are best with lots of streusel! Pile the streusel high and press it together so it will stick together. When the cookie bakes, the streusel will flatten out a bit.

Ingredients

apple snickerdoodles

  • 2 apples peeled and chopped
  • 1 tsp cinnamon
  • 1 cup butter cold and cubed
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tbsp greek yogurt or sour cream
  • 1 tsp vanilla
  • 3 3/4 cups flour
  • 1 tsp cream of tartar
  • 1 tsp baking soda
  • 1/2 tsp salt

streusel

  • 1/2 cup brown sugar
  • 1/2 cup oats
  • 1/4 cup butter softened
  • 1/4 cup flour
  • 1 tsp cinnamon
  • 1/4 tsp salt

maple icing

  • 1 cup powdered sugar
  • 3 tbsp maple syrup
  • splash of milk if needed

Instructions

  1. Preheat the oven to 350. Peel and chop your apples into bite sized pieces. Add them to a bowl with cinnamon and toss to combine.
  2. In a stand mixer or large bowl, combine the butter, white sugar, and brown sugar. Mix for 2 minutes until the butter is completely mixed.
  3. Add eggs, greek yogurt, and vanilla and mix again. Add flour, cream of tartar, baking soda, and salt. Mix until all dry ingredients are combined.
  4. Using a large cookie scoop, or your hands, get 1/4 cup of dough and create a cavity in it. Pour a spoonful of cinnamon apples into the cavity and close the dough around them. Roll the ball in your hands until it is smooth.
  5. Transfer the dough balls to a lined baking sheet. Slightly flatten each dough ball. Now make the streusel.
  6. Combine the brown sugar, oats, softened butter, flour, cinnamon, and salt in a bowl and mix. The mixture will stick together somewhat, but should crumble when run through your fingers.
  7. Add about 2 tbsp of streusel on top of each cookie. Bake at 350 for 9-12 minutes.
  8. To make the frosting, add the powdered sugar and maple syrup to a bowl and whisk. If the icing is still too thick, add a splash of milk. When cookies are mostly cooled, drizzle with maple icing!
  9. Since these cookies have fresh apples, they are enjoyed best the first or second day! Enjoy!

How should I store these? I made them tonight and WOW! They are so delicious. I used green apples which gave it a nice tart flavor to balance the sweetness. I also put my dough in the fridge between bakes to make them easier to close. I even decided to add some extra apples on top. Thanks for this bomb recipe. My family loves them and I’m sure my friends will too.

Yay! i’m so glad you enjoyed these! They are so perfect for the fall. I would keep them in a sealed container in the fridge, and enjoy them within 2-3 days! Since there are fresh apples in them, they are best within the first couple days so the apples don’t get too soggy.

    Hi!

Wondering if freezing these immediately after cooling and taking them out as we eat them would help them last a bit longer. Do you think they would still get soggy?

    Thanks!

hi! i haven’t tested that out. i would probably recommend freezing the dough, then baking them from the freezer! then you could just bake them right when you want to eat them!
