These Parent Trap peanut butter Oreos are the part one of my short series, “Desserts Inspired by Disney Movies!” It was easy to decide which Disney movie to do first. The Parent Trap is easily my favorite Disney movies, and one of my favorite movies ever!

I was obsessed with The Parent Trap when I was young. We had it on VHS and I would watch it constantly, feeling such a magic in it. And the soundtrack? One of the best movie soundtracks of all time. SO, to do this movie justice, I had to make Hallie and Annie’s favorite treat: Oreos with peanut butter. The Oreo cookie is make with a cake mix, which makes them easy to make, but also super chewy and soft. THEN, the peanut butter filling! It has a strong peanut butter filling, but not overwhelming. It’s basically perfect and matches so well with the Oreo! Annie and Hallie were not wrong with the peanut butter + Oreo combo. You have to try it.

Ingredients

oreos

  • 4 tbsp butter softened
  • 1 chocolate cake mix (or white cake mix + 1/4 cup cocoa powder)
  • 2 eggs
  • 1 tbsp greek yogurt (or sour cream)

peanut butter filling

  • 4 tbsp butter softened
  • 1/2 cup peanut butter
  • 1/2 tsp vanilla
  • pinch of salt
  • 2-3 cups powdered sugar

Instructions

  1. To make the cookies, preheat the oven to 350. Add the butter to a bowl and beat with a stand mixer (or hand mixer) for 2 minutes. Add the cake mix, eggs, and yogurt. Mix until everything is incorporated. The dough will be very sticky.
  2. Using a small cookie scoop, scoop up to 12 balls of dough onto a cookie sheet. Bake at 350 for 8-11 minuets, until the cookies are just set.
  3. While the cookies are cooling, make the filling. Add the butter and peanut butter to a bowl. Mix with a stand or hand mixer for 2 minutes. Add vanilla and salt and mix again. Add the powdered sugar and mix for another 2-3 minutes until the mixture is smooth.
  4. Once the cookies have cooled, pipe or spread the mixture onto half of the cookies and sandwich with the remaining cookies! Enjoy!

because why choose one when you can have both?? here is the recipe for both:

caramel coconut:
- 1 Quaker® caramel rice cake
- 1 teaspoon hazelnut butter
- 3 dates
- 1/4 cup unsweetened shredded coconut
- 1/4 teaspoon vanilla paste
- pinch of salt
- 1/2 teaspoon hot water
- 2 tablespoons chocolate chips
- 1/2 teaspoon coconut oil
- flaky salt
add the dates, coconut, vanilla paste, and salt to a food processor. blend until the dates start to break down, then add the hot water and blend until a paste forms. set aside. place the chocolate chips and coconut oil in a bowl and microwave at 15 second intervals, stirring between each, until melted and smooth. top the Quaker® caramel rice cake with the hazelnut butter, the coconut date mixture, and drizzle with chocolate. top with flaky salt then transfer to the fridge to set up for about 10 minutes. enjoy!

cottage cheese:
- 1 Quaker® lightly salted rice cake
- 1/3 cup cottage cheese
- 1/4 avocado, thinly sliced
