This summer blt will be on repeat for me the rest of the summer! Admittedly, this should actually be called a bltae? Maybe a belta? Let me know which you think is best, but for now we will go with summer blt.
Connor and I are living in Arkansas for the summer, and it is hot and humid here. So, for the most part, we want meals that don’t use a lot of heat and that are refreshing. This summer blt is the perfect option. It takes very little heat and is so fresh and yum!
what is in this summer blt?
- ciabatta
- herbed mayo (mayo, dried basil, dried dill, lemon juice)
- bacon
- tomatoes
- lettuce
- avocado
- parmesan fried eggs (eggs fried in parmesan cheese)
faqs about this summer blt
- What are parmesan eggs? Think pesto eggs, but parmesan cheese instead! If you love the parmesan crisps that are so popular, you’ll love these fried eggs. And they are so easy to make! Lay some parmesan cheese on a non-stick pan, then when it starts to melt, crack your eggs on top. The eggs will cook, and they’ll be on a bed of crispy parmesan! They go perfectly with this sandwich, but would also be so delicious on their own.
- Do i have to use ciabatta bread? No! I personally love ciabatta bread with this sandwich because it toasts really nicely but still has a soft bite, but you can use any bread you like! This would be great on sourdough, or even on some Dave’s Killer Bread.

summer blt

Ingredients
- 1 loaf ciabatta bread any bread will work
- 2 tbsp butter
- 1/4 cup mayonnaise
- 1/2 tsp dried dill
- 1/2 tsp dried basil
- 1 tsp lemon juice
- 4-5 slices bacon
- 1-2 tomatoes
- 3 large pieces romaine lettuce
- 1/2 avocado
- 1/4 cup parmesan cheese
- 3 eggs
Instructions
- Cut the ciabatta loaf in half. Spread the butter on both sides. Toast in the oven on broil on high, but WATCH CLOSELY. It will only take a couple minutes for the bread to be perfectly toasted, but it will quickly burn, so take it out of the oven right when its golden brown.
- Add bacon to a pan over medium heat. Cook on both sides until its done to your liking.
- While bacon is cooking, add parmesan to a non-stick pan over medium heat. When the cheese begins to melt, crack eggs on top of the parmesan cheese. Let the eggs cook for 3-4 minutes, until yolks are cooked to your liking.
- In a small bowl, combine mayonnaise, dill, basil, and lemon juice. Stir until combined.
- Slice tomatoes and avocado. Wash off romaine lettuce.
- To assemble, spread the herbed mayo on both sides of the ciabatta. Top with bacon, tomatoes, lettuce, avocado, and parmesan eggs. Top with other piece of ciabatta and enjoy!
