sweet potato, lentil, and chickpea curry

Fall is in full swing and I am craving all things warm and cozy, aka this sweet potato, lentil, and chickpea curry! It’s filling and flavorful and is vegan! It’s the perfect weeknight dinner and will be everyone’s favorite.

I’m not kidding about this being everyone’s favorite. This curry is in Emi’s (my 1 1/2 year old daughter) top three favorite dishes. Every time I make it she eats multiple servings and will eat the leftovers for days. Most people are surprised it isn’t too spicy for Emi, but it really isn’t bad. I add a couple tablespoons of red curry paste and a couple tablespoons of tomato paste. If you aren’t trying to feed this curry to a 1 year old and want more spice, you can add all curry paste (and no tomato paste), so it’s up to you!

ingredients needed for sweet potato, chickpea, and lentil curry

  • 1 tbsp olive oil
  • 1/2 yellow onion
  • 3 cloves of garlic
  • 2 tbsp red curry paste
  • 2 tbsp tomato paste
  • 1/2 tsp cumin

  • 1 14oz can coconut milk
  • 1 cup water
  • 1 medium sweet potato
  • 1 cup cooked lentils
  • 1 14oz can chickpeas

I was skeptical because I hate the taste of lentils and chickpeas but your recipe proved me wrong. Turns out that I have been making it all wrong lol. This has now become my favorite comfort food. I am so glad that my trusted my hungry self from yesterday she knew what she was doing. I shared this recipe with my sister and she is looking forward to making it as well.

because why choose one when you can have both?? here is the recipe for both:

caramel coconut:
- 1 Quaker® caramel rice cake
- 1 teaspoon hazelnut butter
- 3 dates
- 1/4 cup unsweetened shredded coconut
- 1/4 teaspoon vanilla paste
- pinch of salt
- 1/2 teaspoon hot water
- 2 tablespoons chocolate chips
- 1/2 teaspoon coconut oil
- flaky salt
add the dates, coconut, vanilla paste, and salt to a food processor. blend until the dates start to break down, then add the hot water and blend until a paste forms. set aside. place the chocolate chips and coconut oil in a bowl and microwave at 15 second intervals, stirring between each, until melted and smooth. top the Quaker® caramel rice cake with the hazelnut butter, the coconut date mixture, and drizzle with chocolate. top with flaky salt then transfer to the fridge to set up for about 10 minutes. enjoy!

cottage cheese:
- 1 Quaker® lightly salted rice cake
- 1/3 cup cottage cheese
- 1/4 avocado, thinly sliced
- 1 mini cucumber, thinly sliced
- everything but the bagel seasoning
- fresh dill
top the Quaker® lightly salted rice cake with the cottage cheese, avocado, cucumber, seasoning, and fresh dill. enjoy!
