For day 3 of my 12 Days of Thanksgiving Recipes, we are making the perfect dinner rolls from scratch. Rolls are an essential part of a Thanksgiving dinner, in my opinion. This roll recipe has withstood the test of time, and is truly the best! They are soft, fluffy, and so easy to make. Plus, they can be made the night before if that is easier for your Thanksgiving schedule! If you are looking for a wheat roll instead, check out my overnight wheat rolls.
ingredients needed for the perfect dinner rolls
- 1 packet instant yeast
- 1 cup milk, warmed (around 100-110F)
- 8 tbsp butter, divided
- 3 tbsp honey
- 1 egg
- 3 1/2 cups all-purpose flour (420 grams)
- 1/2 tsp salt
how to make the perfect dinner rolls
- Activate the yeast. Add milk and yeast to the bowl of a stand mixer, then let it sit for 5 minutes.
- Add in the wet ingredients. Soften 4 tbsp of butter, and add it to the bowl. Add in the honey and egg. Mix until everything is combined.
- Add in the dry ingredients. Add in the flour and salt. Mix the dough with a dough hook for 5 minutes, until it starts to pull away from the side of the bowl. It should be very soft and slightly sticky. If the dough is too sticky, add flour, little by little.
- Let the dough rise. Cover the bowl with a cloth or plastic wrap and let it rise for one hour. If you are making these rolls the day before, you can also refrigerate the dough overnight to let it rise.
- Cut the dough. Dump the dough out on a clean surface. Divide the dough in half to make it easier to work with. Roll the dough into a large square, about 12″ x 12″. Use a knife or pizza cutter to cut the the dough into six strips, each about 2″ wide.
- Form the rolls. Melt the other 4 tbsp of butter, and lightly brush each strip with it. Roll each strip up to form a roll shape. Transfer the rolls to a greased 9″ x 13″ pan with the seam-side down. Repeat these steps with the second half of the dough.
- Let the rolls rise again. Once all the rolls are in the pan, cover the pan with cloth or plastic again and let them rise for another 30 minutes. Preheat the oven to 350F.
- Bake. After the rolls are done rising, bake them in the oven for 25-30 minutes, until the tops are golden brown. Enjoy!
tips for best turnout
- Make sure your warm milk is between 100°F and 110°F. If your milk is too hot, it will scorch the yeast, and your rolls will not rise.
- Weigh your flour using a kitchen scale. Too much flour will make your dough dry, and your rolls will have a hard time rising. If you feel like you have added too much flour to your dough, slowly add warm water, milk, or butter, a teaspoon at a time, until it is the correct consistency—very soft and a little sticky.
- Let your dough rise in a warm room. A cold room will slow down the rising process.
- Really allow your rolls to rise during both of the rising times. The first rise lasts about an hour, and the second lasts about 30 minutes. When your rolls do not have enough time to rise, they end up small, dense, and lacking flavor.
faqs
Yes, you can make this recipe without a stand mixer! You will just need to knead the dough by hand for about 10 minutes.
Yes, you can make rolls the night before! After you have made your dough, you can stick it in the fridge to rise overnight. The next morning, pick up right where you left off in the recipe.
If you are going to freeze the dough, make it as usual, let it rise (the first rise), shape it, then put it in a pan and freeze it. Once they are frozen, take them out of the pan and put them in an airtight bag, and keep them in the freezer. On the day you need the rolls, place them in a greased pan and let them thaw/rise for 4-6 hours. Then bake as instructed.
Yes, you can absolutely double the recipe! You do not need to double the rise time when you double the batch.
If you don’t have a rolling pin, you can shape the rolls by hand into classic ball-shaped rolls.

the perfect dinner rolls

Ingredients
- 1 packet instant yeast (2 1/4 tsp)
- 1 cup milk warmed (around 100-110F)
- 8 tbsp butter divided
- 3 tbsp honey
- 1 egg
- 3 1/2 cups all-purpose flour 420 grams
- 1/2 tsp salt
Instructions
- Add the milk and yeast into the bowl of a stand mixer. Let it rest for 5 minutes.
- Soften 4 tbsp of butter and add it to the bowl along with the honey and egg. Mix until everything is combined.
- Add the flour and salt and mix with a dough hook for 5 minutes until the dough has formed and is starting to pull away from the side of the bowl. The dough should be very soft and slightly sticky. If it is really sticky, add a bit more flour.
- Cover the bowl with a cloth or plastic wrap and let it rise until doubled, about an hour. (Alternatively, you can transfer the bowl to the fridge and let the dough rise overnight, then continue the rest of the steps the next day)
- Dump the dough out onto a clean surface. Divide the dough in half and roll one half out into a square, about 12"x12". Use a knife or pizza cutter to cut the dough into 6 strips, each strip about 2" wide.
- Melt the remaining 4 tbsp of butter. Lightly brush each strip of dough with butter and roll it up. Transfer the rolls to a greased 9"x13" pan, with the seam side down. Repeat the process with the other half of the dough. You should have 12 rolls total.
- Cover the pan with a cloth or plastic wrap and let it rise for 30 minutes. While the dough is rising, preheat the oven to 350F.
- Once they've finished rising, transfer the rolls to the oven and bake for 25-30 minutes, until the tops are all golden brown. Enjoy!

This looks so yummy!!! Trying to save to Pinterest, but it says the image is ‘corrupted’? Love your website and can’t wait to try some of these recipes!!!
hey! i’m so sorry it wouldn’t work to add it to Pinterest. let me see if i can fix it!
hey! i’m sorry it didn’t work to add it to pinterest. did you try clicking on the “pin recipe” button on the recipe card? that is working on my end! let me know if that is working for you.
Could you used bread flour vs all purpose? Thanks!
bread flour would work just fine!
Came out great first try! Very yummy! Can I substitute out the honey for sugar? Looking for a good garlic roll recipe
yay i’m so glad! yes you can totally sub the honey for sugar.
Are these the correct measurements I followed it exactly and my dough was not nearly as pliable and doughy it was a pretty tough dough ball
hi! i’m sorry these didn’t turn out for you. i would make sure you aren’t over measuring your flour! i would recommend using a kitchen scale to make sure you don’t get too much flour in the dough — too much flour can lead to a tough dough.
I had the same problem. Even made them a second time using a 1/4 flour and same results. Not even CLOSE to what the video showed. So frustrating.
Hi, question! My dough won’t rise for the life of me. Any common reasons you know of as to why it won’t? Trying to work this recipe out for Thanksgiving. Thank you!!
hi! i’m so sorry you are running into this issue. are you using instant yeast? also, make sure your milk isn’t too hot! if it is over 110F it can scorch the yeast and it won’t rise. hope this helps! let me know if you have any other questions!
You were spot on with the hot milk. I think that’s where I went wrong. Tried again and it worked beautifully. Excited to share these tomorrow!
yay i’m so glad that did the trick!
Question – the instructions in step 5 are not clear? Am I using only half the dough to make 12 rolls? What do I do with the other half?
hi! your question is answered in step 6! once you roll out one half, cut them, brush with butter, roll them up and transfer to a baking dish, you repeat the process with the remaining half of dough. i hope that clears things up!
Can I make this recipe without a stand mixer?
yes! just knead the dough by hand for 10 minutes!
These turned out great. Thank you for sharing
yay so glad you enjoyed these!!
Hi! I seen on TikTok there was a separate recipe for leaving the dough overnight. Is there any different steps? Or would I just put the dough in the fridge after rolling the doughs to use for the next day?
hi! yes, the instructions for making them overnight are on the recipe card. once you make the dough, cover the bowl and transfer to the fridge overnight. then the next day, continue with the rest of the instructions!
Hosting a large crowd of roll eaters for Thanksgiving. Is this okay to double or should I make two batches?
you can definitely double the recipe!
Hi, i havnt made this recipe yet but im curious if i double the recipe do i double the rise time?
hi! you shouldn’t need to double the rise time, it should be the same.
Made these for thanksgiving dinner tonight and they were a big hit! Recipe was easy to follow. I drizzled honey on the top of mine after removing from the oven. Was a great touch! Thanks for sharing!
yay so glad you enjoyed these!!
I’ve made these three times now and they’re a huge hit every time!! Definitely recommend 🙂
YAY i’m so glad!! thank you!!
These look amazing! would i be able to replace the milk/butter with a plant based version if i wanted to make these dairy free? would the result be the same?
hi! i haven’t tested these with a plant based butter, but it should work just fine! i’ve used plant based milk and it works great and i’ve used plant based butter in other baking recipes and they’ve turned out great!
Is there a way I could prep and roll the dough ahead of time and freeze it until I am ready to bake them? If so, what would the instructions be for this and how long would they stay good for in the freezer?
Thanks!
hi! yes, you can freeze before baking! you’ll want to make the rolls through the first rise and shape them, but once they’re shaped (before the second rise), place them in a pan and freeze. once they’re frozen, place them in an airtight bag and keep in the freezer! then on the big day, place the frozen rolls in a greased pan and let them thaw / rise for 4-6 hours and then bake as instructed.
They are PERFECT!!
crying!! so glad you enjoyed!
this recipe is phenomenal. i’ve made them twice before and they get so many compliments. i’m excited to make them again for thanksgiving. you need to make these!!
yay so glad you love these!!!! <3
Is there a way to make these without having to roll them out? I just discovered that I do not age. A rolling pin or anything to use in order to roll these out.
you can shape them however you want! you can cut the dough into equal chunks and use your hands to roll them into balls for a classic dinner roll shape.
