Preheat oven to 350. Add the butter to a pan over medium heat. Let the butter melt and begin to bubble. After a couple minutes, it will foam up a lot, then the foaming will subside, and you’ll be left with brown, nutty smelling butter! Turn off the heat and let the butter cool for 10 minutes.
Add white sugar and brown sugar to the butter. Stir until combined. Add vanilla and eggs, one at a time, stirring throughly and quickly between each. Add peach puree (blended peaches) and stir.
Add flour, cinnamon, baking powder, and salt. Mix until just combined. Pour batter into an 8x8 dish, greased or lined.
Bake at 350 for 40-45 minutes, until the middle looks just set. Remove from oven and let cool completely.
While the bars are cooling, make the streusel topping. Combine oats, brown sugar, flour, butter, and cinnamon. Pour mixture onto a baking sheet and bake at 350 for 8-10 minutes.
Add heavy cream to a large bowl. Whip for 5-10 minutes until stiff peaks form.
When bars are completely cooled, top with a scoop of whipped cream and plenty of streusel! Enjoy!
