peach pie bars

Next up for my series “turning desserts into brownies / blondies / bars” is these peach pie bars! And these may be my FAV ONES YET. They are so fresh and literally have fresh peaches in the batter and on top! Yum! Then they’re topped with fresh whipped cream and streusel.

It is officially peach season and I am a happy gal. There are few things better than fresh peach season. I love eating fresh peaches on their own, as well as in/on other foods! One of my favorite peach recipes (other than these bars, ofc) is my chilled peach pie cookies! So if you need other peach inspiration, check those out.

The topping on these bars is fresh whipped cream! I don’t add any sweetener to the whipped cream, because I think the bars are sweet enough. The sweet in the bars balances perfectly with the whipped cream. Then we have the very important streusel! This streusel ties everything together and really makes these bars taste like peach pie. It is an extra step, but it is well worth it and I think its necessary. You won’t regret it.

If you like these peach pie bars, check out these other brownies / blondies / bars from this series!

Ingredients

peach bars

  • 1 cup butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 3 eggs
  • 2 tsp vanilla
  • 1 cup fresh peach puree
  • 2 cups flour
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp salt

streusel topping

  • 1/2 cup oats
  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 1/4 cup butter softened
  • 1 tsp cinnamon

whipped topping

  • 2 cups heavy cream

Instructions

  1. Preheat oven to 350. Add the butter to a pan over medium heat. Let the butter melt and begin to bubble. After a couple minutes, it will foam up a lot, then the foaming will subside, and you’ll be left with brown, nutty smelling butter! Turn off the heat and let the butter cool for 10 minutes.
  2. Add white sugar and brown sugar to the butter. Stir until combined. Add vanilla and eggs, one at a time, stirring throughly and quickly between each. Add peach puree (blended peaches) and stir.
  3. Add flour, cinnamon, baking powder, and salt. Mix until just combined. Pour batter into an 8×8 dish, greased or lined.
  4. Bake at 350 for 40-45 minutes, until the middle looks just set. Remove from oven and let cool completely.
  5. While the bars are cooling, make the streusel topping. Combine oats, brown sugar, flour, butter, and cinnamon. Pour mixture onto a baking sheet and bake at 350 for 8-10 minutes.
  6. Add heavy cream to a large bowl. Whip for 5-10 minutes until stiff peaks form.
  7. When bars are completely cooled, top with a scoop of whipped cream and plenty of streusel! Enjoy!

You need powdered sugar for the heavy cream. Why leave that out in the Ingredient list and instructions?

hi! that actually isn’t a mistake. i have a paragraph about it near the top of this post. i purposely don’t sweeten the heavy cream. i think the bars are sweet enough that the whipped cream doesn’t need sugar. if you would like to add sugar, go right ahead! but that is not a mistake on this post.
