I don’t cook steak often, but when I do I need it cooked perfectly and flavorful, which is where this steak with spring chimichurri comes in. This is the easiest way to cook steak (in my opinion) and it turns out perfect every time. Then pairing it with this spring chimichurri? Oh it is perfect in every way.
Chimichurri is typically made with parsley, but I am not a huge fan of parsley, so we are making a “spring” chimichurri! When I think of spring flavors I automatically think of fresh dill. So this chimichurri has fresh dill and chives, along with olive oil, vinegar, lemon zest, etc. It is so fresh and flavorful and you will want it on everything. One time after I made it, Connor was doing the dishes and accidentally washed down my leftover chimichurri. When I noticed I FELL TO MY KNEES because I was so crushed. It is that good.

steak with spring chimichurri

Ingredients
steak
- 1 tbsp avocado oil
- 1 tsp salt
- fresh cracked pepper
- 1.5 lb steak i like NY strip or ribeye cuts the best
- 1 tbsp butter
- 2 cloves of garlic
spring chimichurri
- 1/2 cup fresh dill
- 1/4 cup fresh chives
- 2 tbsp parmesan cheese
- 2 tbsp olive oil
- 1 tbsp white balsamic vinegar
- zest of one lemon
- 1 tbsp lemon juice
- 1 tsp honey
- 1 garlic clove grated
- salt and pepper to taste
Instructions
- Pull the steak out of the fridge to come to room temperature. While the steak is warming up, make the chimichurri. Finely chop the fresh dill and chives. Add them to a bowl along with all of the other ingredients for the chimichurri. Set aside.
- Pat the steak with paper towels to remove any extra moisture. Season with salt and pepper on both sides. Add avocado oil to a cast iron skillet over high heat. Once the oil is hot, add the steak to the pan.
- Let the steak cook for 2-3 minutes, then flip. You should have deep color and a great sear on the first side. Let the steak cook on the other side for 1 additional minute. Then, turn the heat down, and add the butter and garlic to the pan. Use a spoon to scoop the butter on top of the steak, over and over, for a minute. This is basting the steak and adds a lot of flavor. After one minute, remove the steak from the heat.
- Let the steak rest for 5-6 minutes. After the steak has rested, slice it against the grain. Top with plenty of chimichurri and enjoy!

Amazing and simple recipe. I could eat the chimichurri by the spoon.
YAY so glad you loved this one! and i totally agree with you about the chimichurri.
