vampire diaries pancake cookies

vampire diaries pancake cookies

last updated on October 29, 2026

Continuing my series Making Cookies Inspired by TV Shows and Movies, we have Vampire Diaries pancake cookies! These are based off of the pancakes Damon makes, including the whipped cream fangs!

Admittedly, I’ve never seen Vampire Diaries and don’t know much about it, so I don’t even know if Damon is a good guy or bad guy, but I know he makes yummy pancakes!

Regardless, these cookies are so soft and delicious. They’re made of a brown sugar cookie dough, then are topped with a maple syrup icing, and of course a blueberry smile! They taste like a mix between a pancake and a blueberry muffin top. So basically you need them in your life. And you probably need to eat one for breakfast!

It works best if you press the blueberries into the cookies after they bake. Let them cool for a few minutes, then press the blueberries in. If you don’t have blueberries, you can just leave them out. They do taste good with the cookie, but they are not essential. The maple icing is really simple to make, and really ties these cookies together.

Ingredients

pancake cookies

  • 1/2 cup butter softened
  • 1/2 cup vegetable oil
  • 1 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 1/4 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup blueberries

maple icing

  • 1/2 cup powdered sugar
  • 1 tbsp maple syrup
  • splash of milk

Instructions

  1. Preheat the oven to 350. To make the dough, combine the butter, oil, and brown sugar. Mix for a couple minutes until it is smooth.
  2. Add the egg and vanilla and mix again. Add the remaining ingredients and mix until just combined.
  3. Using a large cookie scoop, scoop a ball of dough onto a lined baking sheet. Put up to 6 cookies on a normal sized baking sheet.
  4. Bake the cookies at a 350 for 10-12 minutes, until golden brown and just starting to set.
  5. Combine the powdered sugar, maple syrup, and milk in a small bowl and whisk until it is smooth and runny. Once the cookies have cooled slightly, drizzle on the icing and push 7-8 blueberries into each cookie to make a smiley face! Enjoy!

add the dates, coconut, vanilla paste, and salt to a food processor. blend until the dates start to break down, then add the hot water and blend until a paste forms. set aside. place the chocolate chips and coconut oil in a bowl and microwave at 15 second intervals, stirring between each, until melted and smooth. top the Quaker® caramel rice cake with the hazelnut butter, the coconut date mixture, and drizzle with chocolate. top with flaky salt then transfer to the fridge to set up for about 10 minutes. enjoy!
