copycat crumbl snickerdoodle cupcake cookies

snickerdoodle cupcake

I’m back with another Crumbl copycat with these copycat Crumbl snickerdoodle cupcake cookies! These cookies are soft, cinnamon and sugar cookies topped with a smooth cream cheese frosting, dusted with cinnamon and sugar!

Crumbl started in my home state of Utah. I remember when there were only two locations and now there are hundreds of locations across the country! It is crazy how much they have grown, but they have accumulated quite the dedicated following. But, Crumbl rotates through many flavors, so if you are craving a certain flavor, it is unlikely you’ll be able to get it on demand, unless it is one of their flavors of the week! So, I am recreating their flavors so you can make them anytime, for much cheaper, at home!

This snickerdoodle cupcake flavor was the most requested flavor on my TikTok. And if you didn’t see my first recreate, I made Crumbl’s cornbread cookies! You can always request your favorite flavor on my TikTok, Instagram, or in the comments of this post!

The base of this cookie is a cinnamon and sugar cookie. It is a simple, thick dough rolled in cinnamon and sugar before baking. The cookie does not have cream of tartar in it. I don’t think Crumbl’s version of this cookie has cream of tartar, so I didn’t include it in mine. The frosting is a standard cream cheese frosting made with butter, cream cheese, vanilla, and powdered sugar. Then of course, we top everything off with a dusting of cinnamon and sugar!

If you try these cookies, I would love to see it! If you share a picture on Instagram, please tag me @thepalatablelife so I can see!

Ingredients

cinnamon sugar cookies

  • 1 cup butter
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3 1/2 cups flour
  • 1 tbsp cornstarch
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tbsp white sugar
  • 1 tsp cinnamon

cream cheese frosting

  • 1/2 cup butter at room temp
  • 8 oz cream cheese at room temp
  • 3 cups powdered sugar
  • 1 tsp vanilla

Instructions

  1. Preheat the oven to 350. Add butter, brown sugar, and white sugar to a stand mixer. Mix for 2-3 minutes. Add eggs and vanilla, and mix again.
  2. Add flour, cornstarch, baking soda, and salt. Mix until just combined.
  3. Combine cinnamon and sugar in a small bowl. For Crumbl sized cookies, scoop 1/2 cup of dough and roll into a ball. Drop the dough into the bowl with cinnamon and sugar and roll to coat the entire ball.
  4. Add up to 6 cookies on a normal sized cookie sheet. Flatten the dough balls slightly. Bake for 9-11 minutes. Cookies should look just set, possibly still slightly doughy. This is perfect. Let the cookies cool completely.
  5. While the cookies cool, make the frosting. Combine butter and cream cheese in a stand mixer and mix for 2 minutes. Add powdered sugar and vanilla and mix another two minutes.
  6. Pipe frosting onto each cookie and dust with extra cinnamon sugar. Enjoy!

What’d you think? I’d love to hear your thoughts or if you have any questions!

What is your weight in grams for the flour in these? I think last time I made them I messed up and went a little too light on the flour because they didn’t puff as much as I’d hoped

I made them and they turned out so good! They’re exactly how crumbl cookies taste! Could you give me the calories per cookies?

      1. Saz

Surely the frosting can’t be 3 cups of sugar?

These were SO good, but a little rich. Is there a way I can cut that? I don’t make frosting much, and we’ve never had crumbl. As long as I’ve got a hankering for something sweet, this is a keeper!

Hey! I’m so glad you loved them! Crumbl cookies are all quite rich. You could add less powdered sugar to the frosting, so the frosting would be less sweet! Or, you could just not make frosting and have plain cookies.

Does the cookie dough freeze well? I plan to make these for a work party but would like to make the dough ahead of time this weekend and take it out to bake towards the end of the week.

hey! yes, the dough does freeze well! i would scoop out the dough first, then freeze it. then when you’re ready to bake, just put them on a baking sheet and you’re good to go! you’ll probably need to add 1-2 minutes on the cook time since the dough will be so cold.

hi! the dough definitely should not be super floury… i’m sorry this happened! most often this is because the flour hasn’t been measured correctly. when measuring flour you should never pack it into the measuring cups, and for most accurate goods i would recommend using a scale! i hope this helps!

    hi mallory!
i’m 100% sure this is my fault, but the cookies came out basically raw and there were chunks of butter in the frosting. how can I fix this?

    1. thepalatablelife
      Reply

hi! everyone’s oven is a little different, so you probably need to bake them for longer. bake until the edges are just set! the centers will finish baking as they cool on the hot pan.
and if you start with room temp butter you shouldn’t have any chunks in the frosting. i would make sure it is soft and then mix it substantially with the cream cheese to make sure there are no lumps of butter or cream cheese.

because why choose one when you can have both?? here is the recipe for both:

caramel coconut:
- 1 Quaker® caramel rice cake
- 1 teaspoon hazelnut butter
- 3 dates
- 1/4 cup unsweetened shredded coconut
- 1/4 teaspoon vanilla paste
- pinch of salt
- 1/2 teaspoon hot water
- 2 tablespoons chocolate chips
- 1/2 teaspoon coconut oil
- flaky salt
add the dates, coconut, vanilla paste, and salt to a food processor. blend until the dates start to break down, then add the hot water and blend until a paste forms. set aside. place the chocolate chips and coconut oil in a bowl and microwave at 15 second intervals, stirring between each, until melted and smooth. top the Quaker® caramel rice cake with the hazelnut butter, the coconut date mixture, and drizzle with chocolate. top with flaky salt then transfer to the fridge to set up for about 10 minutes. enjoy!

cottage cheese:
- 1 Quaker® lightly salted rice cake
- 1/3 cup cottage cheese
- 1/4 avocado, thinly sliced
