mini biscuits

I am always down for a biscuit, anytime of day or night, but especially when they are these mini biscuits! They are tiny and perfect for any occasion. Plus, when they’re small then you can eat more of them, right?

Biscuits can seriously go with any meal of the day. Breakfast biscuits and gravy, a lunch turkey bacon avocado biscuit sandwich, a dinner soup with a side of biscuits, a lemon blueberry biscuit for dessert! Those are just a few options, but the point is that biscuits are very versatile! Or, since it is fall, you could enjoy these with my whipped pumpkin honey butter (recipe coming soon!).

ingredients needed for mini biscuits

  • flour
  • baking powder
  • sugar
  • salt
  • butter
  • milk

The great thing about these biscuits is they only use common household ingredients! So whenever you get a craving, these biscuits can quickly be on the table.

how to get the perfect biscuits

There are a few keys to getting the perfect biscuit. The first step is making sure you use COLD butter. Leave it in the fridge until you are ready to add it to the dough! You can cut the butter into small pieces or my preferred way is to use a cheese grater to grate the butter in. Then it is in small pieces that can easily be worked into the dough.

The next key is to not over-mix the dough! Once the butter is added, use your hands to mix the butter into the dry ingredients, until there are small pieces of butter left in the dough. Then, when you add the milk, mix just until the dough comes together. It will be a shaggy dough, but this is perfect!

what to serve with / on these biscuits

  • butter
  • jam
  • chicken nuggets (hello chick-fil-a breakfast??)
  • honey
  • whipped pumpkin honey butter

[PREP] 10 minutes
[COOK] 15 minutes
[TOTAL] 25 minutes

Ingredients

  • 2 cups flour 260 grams
  • 1 tbsp baking powder
  • 1 tbsp sugar
  • 1 tsp salt
  • 1/2 cup butter cold
  • 3/4 cup milk
  • 2 tbsp melted butter

Instructions

  1. Preheat the oven to 425. In a medium bowl add flour, baking powder, sugar, and salt. Mix until combined.
  2. Using a cheese grater, grate the cold butter into the dry ingredients. If you don't have a cheese grater, just cut the butter into small pieces and add to the dry ingredients.
  3. Use your hands to mix the butter into the dry ingredients. Mix until small chunks of butter remain. Add the milk and stir just until combined. Do not over-mix!
  4. Dump the dough onto a lightly floured surface. The dough will be very shaggy. Roll the dough into a 1/2" thick large rectangle. Using a small cookie cutter or cup that is about 1 1/2" in diameter, cut out the dough.
  5. Transfer the cut out dough to a lined or greased baking sheet. Bake for 11-15 minutes, until biscuits are golden brown. Brush with melted butter and enjoy!

I’ve never made biscuits before and these biscuits were very easy and came together quickly. I followed the instructions exactly and baked for 11 minutes. My only complaint is that they get rock hard after a couple of hours. Is there some secret to soften them or did I make a recipe mistake?

hi! i’m glad you enjoyed these! they shouldn’t get hard that quickly. i’m guessing they were maybe over baked? it also could be that you had too much flour. i would make sure you either weigh your flour or spoon and level the flour to make sure you don’t have too much!

My husband said these were the best homemade biscuits he’s ever had! I rolled the dough to more like 3/4″, and used a 1 3/4″ biscuit cutter, and it came out perfect at 11 minutes. My oven runs hot though, which is why I adjusted the measurements. I added this recipe to my weekly rotation!

Would you recommend making these ahead and then freezing?
I won’t have a lot of time and I thought it would be easier to make them a few days ahead and freeze. Thank you!

add the dates, coconut, vanilla paste, and salt to a food processor. blend until the dates start to break down, then add the hot water and blend until a paste forms. set aside. place the chocolate chips and coconut oil in a bowl and microwave at 15 second intervals, stirring between each, until melted and smooth. top the Quaker® caramel rice cake with the hazelnut butter, the coconut date mixture, and drizzle with chocolate. top with flaky salt then transfer to the fridge to set up for about 10 minutes. enjoy!
