slice of pumpkin bread

This pumpkin bread with brown butter streusel is essential for your fall baking! The pumpkin loaf is soft and moist and it’s topped with the yummiest brown butter streusel and a simple maple glaze. It is perfection and I can’t wait for you to try it!

I am in the opinion that you can never have too much pumpkin in the fall. No matter where you are on the pumpkin consumption spectrum, I think this loaf definitely deserves a spot! It uses really standard ingredients and might just be your new favorite.

ingredients for pumpkin bread with brown butter streusel

pumpkin bread
  • 1/2 cup olive oil
  • 1 cup brown sugar
  • 2 eggs
  • 1 cup pumpkin puree
  • 1/4 cup greek yogurt
  • 1 tsp vanilla
  • 1 3/4 cups flour
  • 2 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
brown butter streusel
  • 1/4 cup butter
  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1 tsp pumpkin pie spice

how to make this pumpkin bread with brown butter streusel

This loaf is so simple to make! The loaf comes together in one bowl — first mix the wet ingredients, then add the dry. Fold everything together until it’s just combined. That’s it! Transfer the batter to a loaf pan. For the streusel, add everything to a bowl and mix together. The mixture should stick together but easily crumble in your fingers.

Top the batter with the streusel so it is evenly covered then transfer to the oven to bake. You’ll know the loaf is done when an inserted toothpick comes out clean. Once the loaf cools a bit, remove it from the pan. To make the maple glaze, combine maple syrup and powdered sugar and whisk until smooth. Drizzle the glaze on the loaf and enjoy!

how to store any leftovers

If you happen to have any leftovers, store them in a sealable container. It doesn’t need to be kept in the fridge, just make sure it’s in a sealed container so it doesn’t dry out! Also, if you aren’t going to eat the loaf all in one setting, it is best to not put all the icing on at once. If the icing sits on the loaf for a long time it will make it a bit soggy. Instead, just add glaze to each individual slice!

Ingredients

pumpkin bread

  • 1/2 cup olive oil 120 grams
  • 1 cup brown sugar 215 grams
  • 2 eggs
  • 1 cup pumpkin puree 240 grams
  • 1/4 cup greek yogurt 60 grams
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour 230 grams
  • 2 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt

brown butter streusel

  • 1/4 cup butter 56 grams
  • 1/2 cup flour 65 grams
  • 1/4 cup brown sugar 54 grams
  • 1/2 tsp pumpkin pie spice

maple glaze

  • 1 cup powdered sugaar 120 grams
  • 2-3 tbsp maple syrup

Instructions

  1. Preheat the oven to 350 F. Begin by browning the butter for the streusel. Add the butter to a small pan over medium heat. Stir as the butter melts. Continue to stir until the butter begins to foam up and when it subsides you'll be left with brown, nutty smelling butter. Pour the butter into a bowl and let it cool in the fridge while you make the batter for the loaf.
  2. In a large bowl combine olive oil, brown sugar, eggs, pumpkin puree, greek yogurt, and vanilla extract. Whisk until smooth.
  3. Add flour, pumpkin pie spice, baking soda, baking powder, and salt. Stir until just combined.
  4. Prepare a loaf pan that is approximately 9"x5" by lining it with parchment paper. Pour the batter into the prepared loaf pan.
  5. Now make the streusel. Add the cooled brown butter to a small bowl. Add the flour, brown sugar, and pumpkin pie spice. Mix with your hands or a hand mixer until the mixture sticks together but crumbles when you try to break it up.
  6. Crumble the streusel on top of the batter in the loaf pan. Evenly cover the entire surface of the loaf. Transfer to the oven and bake for 45-50 minutes. The loaf is finished when an inserted toothpick comes out clean.
  7. Let the loaf cool while you make the glaze. To make the glaze combine the powdered sugar and maple syrup in a bowl and whisk until smooth. Drizzle on the entire loaf or just on a slice at a time. Enjoy!

hi! if you’re not going to use olive, i would use a neutral oil like canola or vegetable!

This recipe is delicious! I was looking for a pumpkin bread made with greek yogurt and this recipe reminded me of a pumpkin loaf I bought at a bakery as well as the pumpkin muffins at Costco with the streusel and maple glaze. I used avocado oil instead of olive oil (I find it more neutral). I am not disappointed and will certainly make this recipe again!

The loaf puffed up so much that the streusel fell off during baking. Bummer.

hi! i’m so sorry this happened. did you use a 9-inch loaf pan? if you use a pan that’s too small it will likely overflow every time. hope you still enjoyed it!

    Salted or unsalted butter?

    Amazzzinggg! Love it.
Had to bake it for an extra 15 minutes, and I could do without the glaze. Added an extra tbsp of maple syrup and it still just tasted like straight up icing sugar, wasn’t a fan.

so glad you enjoyed! and yes it’s already sweet enough on it’s own the icing is definitely optional.
