raspberry chia seed jam

This raspberry chia seed jam is my favorite for all occasions. It is much healthier than standard jam, as it is sweetened by honey, and is thickened by chia seeds. It isn’t overly sweet and you’ll want to spread it on everything!

ingredients needed for raspberry chia seed jam

  • 3 cups frozen raspberries
  • 1 tbsp water
  • 2 tbsp honey
  • 3 tbsp chia seeds

Ingredients

  • 3 cups frozen raspberries
  • 1 tbsp water
  • 2 tbsp honey
  • 3 tbsp chia seeds

Instructions

  1. Add the frozen raspberries and water to a pan over medium heat. Use the back of a spoon to help break up the raspberries. Add the honey and stir to combine.
  2. After a couple minutes the raspberries will start to boil. Let the raspberries continue to boil until the mixture has thickened to a runny jam, about 5 minutes.
  3. Turn off the heat and add the chia seeds. Stir until the chia seeds are well distributed. Carefully transfer the jam into a glass jar. Cover and transfer to the fridge to cool completely.
  4. Once the jam is cooled, it should be thick and ready to eat. Enjoy!

Guys this is actually so good! I’m a baker and at first was hesitant to make this recipe because I didn’t ever make it before, but it’s so easy and so yummy! Will be making this to bring to thanksgiving dinner and sending some to friends.

I am going to try this recipe but I am curious how long you think the jam will last in the fridge! Thinking of gifting this for Christmas!

because why choose one when you can have both?? here is the recipe for both:

caramel coconut:
- 1 Quaker® caramel rice cake
- 1 teaspoon hazelnut butter
- 3 dates
- 1/4 cup unsweetened shredded coconut
- 1/4 teaspoon vanilla paste
- pinch of salt
- 1/2 teaspoon hot water
- 2 tablespoons chocolate chips
- 1/2 teaspoon coconut oil
- flaky salt
add the dates, coconut, vanilla paste, and salt to a food processor. blend until the dates start to break down, then add the hot water and blend until a paste forms. set aside. place the chocolate chips and coconut oil in a bowl and microwave at 15 second intervals, stirring between each, until melted and smooth. top the Quaker® caramel rice cake with the hazelnut butter, the coconut date mixture, and drizzle with chocolate. top with flaky salt then transfer to the fridge to set up for about 10 minutes. enjoy!

cottage cheese:
- 1 Quaker® lightly salted rice cake
- 1/3 cup cottage cheese
- 1/4 avocado, thinly sliced
- 1 mini cucumber, thinly sliced
- everything but the bagel seasoning
- fresh dill
top the Quaker® lightly salted rice cake with the cottage cheese, avocado, cucumber, seasoning, and fresh dill. enjoy!
