Ingredients

salmon

  • 1 lb salmon
  • 1 tbsp olive oil
  • 1/2 tbsp brown sugar
  • 1/2 tsp: paprika, onion powder, garlic powder, kosher salt
  • 1/4 tsp: dried oregano, cayenne pepper
  • 2 tbsp butter

mango salsa

  • 2 mangoes
  • 1/4 red onion
  • 1/4 cup cilantro
  • 1/2 tsp honey
  • juice of one lime
  • pinch of kosher salt

cilantro lime dressing

  • 1 cup fresh cilantro
  • 1/2 avocado
  • juice of one lime
  • 2 tbsp olive oil
  • 1 clove of garlic
  • 1/2 tsp kosher salt

other

  • cabbage thinly shaved
  • lime wedges for serving
  • small soft tortillas corn or flour

Instructions

  1. Begin by preparing the salmon. Pat the salmon dry and cut into 1 inch cubes. Transfer to a bowl and add the olive oil, brown sugar, paprika, onion powder, garlic powder, kosher salt, dried oregano, and cayenne pepper. Set aside.
  2. To make the mango salsa, cut the mangoes into chunks and finely dice the red onion and cilantro. Add everything to a bowl. Add the honey, lime juice, and kosher salt. Stir until combined.
  3. To make the cilantro lime dressing, add all the ingredients to a blender or food processor: cilantro, avocado, lime juice, olive oil, garlic, kosher salt. Blend until smooth.
  4. Now cook the salmon. Set a cast iron skillet (or a non-stick pan) over medium heat. Add the butter to the pan and stir it around as it melts so the whole pan is covered.
  5. Add the pieces of salmon to the hot pan. Let them cook for 2-3 minutes then flip. Continue flipping every minute or so until all sides are cooked and the salmon is cooked through.
  6. To assemble to the tacos, spread a dollop of the sauce on a tortilla. Top with cabbage, a few pieces of salmon, and the mango salsa. Enjoy!

These are going to be a new summer go-to! SO yummy and fresh. My avocado had gone bad so I subbed with a few tablespoons of sour cream and it was still lovely! Highly recommend. I’ll be telling EVERYONE about this recipe.
