carbonara udon

Last year we took an incredible trip to Japan and one of the best things we ate was a bowl of carbonara udon. Fresh, hot udon noodles were were topped with thinly shaved beef, an egg yolk, green onions, and lots of black pepper. You then stir everything together to make a smooth, creamy sauce. It was an unforgettable meal and I have been meaning to recreate it ever since!

It will definitely never compare to the freshly made udon noodles in Japan, but I think my recreation is pretty spot on. I decided to use bacon instead of thinly shaved beef, because bacon is easier to find and I love the salty punch that bacon gives. Then just like a classic carbonara, the hot noodles cook the egg yolk to make a beautiful, silky sauce.

ingredients needed for carbonara udon

carbonara sauce
  • 1 egg yolk
  • 1/4 cup parmesan
  • 2 tbsp heavy cream
  • 1 small garlic clove
  • fresh cracked pepper, to taste
noodles + toppings
  • 2 packages of udon (around 7 oz each)
  • 1/4 lb bacon
  • 1/4 cup green onions, thinly sliced
  • 1 egg yolk
  • fresh cracked pepper, to taste

Ingredients

carbonara sauce

  • 1 egg yolk
  • 1/4 cup parmesan shredded
  • 2 tbsp heavy cream
  • 1 small garlic clove grated
  • black pepper, to taste freshly cracked

noodles + toppings

  • 2 packages of udon around 7 oz each
  • 1/4 lb bacon
  • 1/4 cup green onions thinly sliced
  • 1 egg yolk optional
  • black pepper, to taste freshly cracked

Instructions

  1. Begin by setting a medium pot of water over high heat to come to a boil.
  2. Cut the bacon into small pieces and transfer to a pan over medium heat. Stir until the bacon is cooked through then transfer to a bowl and set aside.
  3. To make the carbonara sauce, add all the ingredients to a bowl: egg yolk, parmesan, heavy cream, garlic, and black pepper.
  4. When the water has come to a boil, add the udon noodles and cook according to package instructions (don't add any flavor packets that may come with the noodles).
  5. Add the cooked noodles directly into the bowl with the carbonara sauce. Quickly stir as the hot noodles will cook the egg yolk. Stir until the noodles are fully coated and the sauce is smooth and creamy.
  6. Top with the cooked bacon pieces, green onions, egg yolk, and black pepper. Serve immediately.
